Celiac disease (CD) is caused by an immune reaction (hypersensitivity) to gluten, a protein found in wheat, barley, oats and rye. In people with CD, gluten triggers an autoimmune reaction in which the body produces antibodies that attack the tissues. This reaction causes inflammation and damage to the lining of the small intestine.

Celiac disease is also known as celiac disease, celiac disease, gluten sensitivity. The current treatment is a strict gluten-free diet for life. In a gluten-free diet, wheat, barley and rye are avoided.Oats are not toxic in more than 95 percent of patients with CD or dermatitis herpetiformis, but there are a small subset (less than five percent) for which the oats are not safe. Rice and corn can be part of a gluten-free diet. Most patients have a rapid clinical response to a gluten-free diet (in two weeks), although the response rate varies. Patients should be encouraged to eat natural foods rich in iron and high in folate, as these deficiencies are common. Although the cornerstone of treatment is a gluten free diet, the respect due to the palatability, deficiencies in food labeling and possible cross-contamination are major challenges.

Symptoms

Symptoms vary from person to person. GI symptoms are more common in infants and young children and can include bloating and abdominal pain, chronic diarrhea, vomiting, constipation, pale, foul-smelling, or fatty stools and weight loss. Irritability is another common symptom in children. Malabsorption of nutrients when the nutrition is essential for normal growth of a child and development can lead to other problems such as stunted growth, short stature, delayed puberty and anomalies of the enamel of permanent teeth.

Adults are less likely to have gastrointestinal symptoms and may instead have one or more symptoms such as unexplained anemia, pain, fatigue, bone or joint pain, arthritis, bone loss, depression or anxiety, convulsions, infertility ... People with celiac disease may have no symptoms but can develop complications over time, including malnutrition, liver disease and bowel cancer.

Since malabsorption is a major problem, daily vitamin and mineral supplements is essential. Important supplements include iron, B vitamins, magnesium, calcium and vitamin D.Include foods rich in omega-3 essential fatty acids to your diet such as ground flax meal, walnuts, fish oil, and sprouted nuts. Add nutrient-dense foods and unprocessed foods such as nuts and sprouts in your diet.

Since having to avoid gluten-containing foods for the last five months have been diagnosed with celiac disease {and will soon have the tests for celiac disease}, I had trouble trying to cope without food ... .. a staple in my daily diet all my life. Oh, that girl loved the bread in the south! Let me tell you! Especially cornbread!So suffice it to say, eating is not easy in recent months. Just go to a restaurant .... Something that made things easier in the past .... Really makes life more difficult now. I also discovered that I am intolerant and dairy {which I have suspected for years because I was lactose intolerant for most of my 20 years and took Lactaid pills to deal with discomfort} so no more cheese or ice cream for me either. And some other foods .... I mentioned earlier in this post. Since the diagnosis, I also realized on my own that I am also intolerant of chick peas / chickpeas ....Hummus is no more for me. So no flour chickpea {where I find many pre-packaged gluten-free baking mixes use} else I'm in a terrible amount of pain for hours .... And can not be many more lie on the couch. Yeah .... No fun.

On the positive side, since going gluten free, I lost 10 pounds ... more decisions for a total loss of 37 pounds tail {I now weigh about 115 lbs. on my little 5 "-2 1 / 2" frame} .... and fails to gain weight more.I think making the green smoothie / raw food thing at the beginning of this journey of food has a lot of my healing process of digestion and metabolism .... To say how much damage I had done over the years to eat whatever I wanted. Now I have the metabolism I had back in college, which is a direct miracle of God! Not something I never thought I would be able to tell!

So my plan is to share my success with gluten free adventure here because I know many of you are struggling with similar problems at the moment.I pray it will give you hope that you can do that and I know that you are not alone!
